General Description
Mizuiro 2016 presents a refined, crystalline profile that reflects the philosophical approach of its winemaker. Made from 100% Chardonnay, it is vinified with absolute minimalism: indigenous yeasts, no filtration, and no added sulfites. The wine’s aromatic complexity unfolds in a floral and fruit-driven spectrum—white peach, juicy pear, fresh citrus, and delicate blossoms—underscored by subtle notes of hazelnut, almond, and a gentle buttery nuance. Vineyard & Terroir
The grapes come from the tiny parcel Les Saugettes, perched above the village of Grusse in the Jura. These steeply sloped hillsides receive diffused light and benefit from a cool, almost alpine climate. The soils are rich in marl and limestone, dotted with stones and pebbles—contributing crystalline minerality and pronounced salinity to the wine. The vineyards are cultivated organically and biodynamically, with all vineyard work done by hand. Permanent natural cover crops and short pruning preserve the soil’s vitality. Winemaking & Natural Approach
Mizuiro 2016 is vinified true to Kenjiro Kagami’s minimalist principles. Grapes are pressed whole or only lightly crushed, then gently pressed. Fermentation begins spontaneously using native yeasts, with no temperature control or added yeasts. The wine is aged for over two years: around 20 months in seasoned oak barrels, followed by rest in tank on fine lees, with minimal racking. No sulfur is added at any stage—not during fermentation, nor at bottling. The wine is neither fined nor filtered. This uncompromising approach results in a wine of layered texture and natural complexity, evolving freely in the bottle. The final expression is vibrant, deeply terroir-driven, and exceptionally pure.
